soba noodles / kale / baby bella
It would be wrong of me not to share this incredibly easy, healthy, and delicious meal. I used organic soba noodles which only take 5 minutes to make, and in a frying pan I sautéed baby bella mushrooms with soy sauce and sesame seed oil. Add sea salt and sesame seeds to taste. When the mushrooms were about done, I added a bag of frozen kale. Rinse soba noodles with cold water, then toss with the mushrooms and kale. Mix together and enjoy! I added extra soy sauce, sesame seed oil, and salt to my noddles. This was such a huge hit! I had thirds and Bennett had multiple servings, too. He especially loved the kale and mushrooms. Overall, it took no more than 10-15 minutes, if I had to guess. Bon appetite!
Parmesan + kale soup
If you haven't already tried Parmesan broth with kale and white beans, I highly recommend. So easy, too. The only time I measure anything is when I'm baking. So, far this, I added several onions, a ton of parsley, a handful of garlic, and two large Parmesan rinds to a large pot of water and brought it all to a boil. I added sea salt to taste, fished everything out, and added the kale and white beans. I would be lying if I said I didn't add a little bit of Kerrygold butter in there, too. The end result is just heavenly. This will be a fall and winter staple, for sure.
